Not much new and interesting on the ranch at the moment, so I thought I’d share one of my favorite easy recipes. Enjoy!
Southwest Casserole
1 (15 oz) can whole kernel corn, drained
1 (15oz) can black beans drained & rinsed
1 (10oz) can whole tomatoes
1 cup sour cream
1 cup picante sauce
2 cups shredded cheddar cheese
Topping:
1 bunch green onions, chopped (optional)
1 small can sliced olives
8 oz shredded Jack cheese
Combine casserole ingredients and spoon into a lightly greased 9×13 baking dish. Combine topping ingredients and cover top of casserole. Bake at 350 for 1 hour.
